Health Department Issues Guidance for Retail Food Establishments Related to Water Main Break in Peoria

The Peoria City/County Health Department is providing guidance on food safety for retail food establishments related to the water main break in the City of Peoria.

  1. Food establishments that do not have water need to close.
  2. If restaurants/commercial establishments do not have enough water pressure to conduct sanitary functions, they need to close.
  3. Once water supply is re-established, then boil order procedures will go into effect.

Restaurants should follow the Hazard Analysis and Critical Control Points (HACCP) bulletin for Food Establishments. This bulletin explains a boil order, potable water and how it should be used, kitchen equipment that should not be used, and what to do after the boil order is lifted.
